The training manual is addressed to all the actors involved in poverty alleviation among small farmers in the areas of Albania where currently World Vision Albania has undertaken its interventions. This paper provides key concepts for understanding the dynamics of the changing value chain of the olive product, selected in the area of Kurbin. The consumption model of the most urban costumers, is shifting towards high value goods, ready-to-cook products; they have the opportunity to buy value-added products, although at higher prices. However, the majority of the rural population is still aware of prices; they prefer to buy raw products at the lowest price. Therefore, value chain analysis also seeks to offer cost-cutting innovations across the value chain to benefit in addition to poor price consumers by focusing on value-added products.
